This delicious blend of vegetables is a quick and simple creation that can be easily thrown together by anybody looking to cook. Made from a combination of vegetables with a tangy twist, this is one tasty side dish. Or serve over quinoa or brown rice for an easy (and cheap!) weeknight dinner.
Ingredients
- 1 can (15 ounces) black beans, rinsed and drained
- 2zucchinis, diced
- 1 can diced tomatoes
- 1 cup diced okra
- Sriracha (or hot sauce of choice)
- Salt
Directions
- In a large skillet, sauté black beans, zucchini, tomatoes, and okra over medium heat for 5 to 10 minutes.
- As veggies begin to soften, add hot sauce and stir to combine. Add salt to taste.
